Feta, Spring Peas and Mint Salad

This was ridiculously easy. I swung through the Castro Farmer's Market on the way home from work yesterday. Picked up some spring peas, some fresh mint and some feta. Tonight I crumbled the feta cheese in the middle of a plate. I sliced up some of the peas, leaving them raw and crunchy. Took a stack of the mint leaves and chiffonaded them before sprinkling that over the peas. A little olive oil, a little cracked pepper, a little salt. Done. A wonderful spring salad.
